The estate was built to make that argument again: grain grown on and around the farm, malted on the property in a working floor malting, run through a small copper pot still and aged in new oak on site. Dave Pickerell, the former Maker's Mark master distiller who went on to shape WhistlePig and a good part of the craft-whiskey boom, designed the whiskeys before his death in 2018. The Double Cask Rye is the estate's flagship rye and the one most drinkers meet first. It is also, at roughly $110 to $150, one of the more expensive non-cask-strength ryes on our shelves, which is the lens we have to read it through.

Two Barrels, and the Second One Talks Loudest

"Double cask" here means two rounds of new charred American oak, a #3 char followed by a #4 char, rather than a wine or spirit finish. That second, heavier char is the whole personality of this whiskey. Oak, char and toast turn up in five of the eight professional noses we tallied and seven of eleven palates, and the descriptions run from "burnt buttery toast" to "sawdust and furniture store" to "bitter charred oak". What it delivers alongside the wood is a dessert-like sweetness — butterscotch, caramel, brown sugar — layered with cinnamon, clove and rye spice, candied ginger, dried fig, espresso and bitter chocolate. Wine Enthusiast, which scored it 94, summed the style up as "a deep, rich rye that shows off espresso, toffee, sarsaparilla and caramel." It reads, in other words, much closer to a heavily-oaked bourbon than to a typical American rye, which is why it sits comfortably among our oak-forward ryes.

What Is Missing Is Part of the Story

The absences are as telling as the notes. Across every independent review we could find, not one taster mentioned mint or menthol — even though the brand's own tasting notes do — and the dill-pickle character that defines most craft ryes appears exactly once, as "a subtle hint". Citrus turns up once, floral notes twice. This is a 100% rye whiskey that has had most of its green, herbal rye character buried under oak and caramel, and whether you read that as a loss or a relief depends on what you want rye to be. If you want the grassy, minty end of the category, our 100% rye collection has bottles that deliver it at a fraction of the price.

The Sweet-Front, Bitter-Back Problem

The two most careful critical reviews landed on the same complaint. Paste's Jim Vorel, scoring it 7.5 out of 10, described a "bold, demonstrably sweet" opening of candied ginger, cinnamon and stone fruit that "cut off abruptly" into milk chocolate, toast and tannic bitterness — "big, bold and a little confused." The Whiskey Wash's Shauna McKnight gave it 8 out of 10 and put it more gently: she liked each flavour individually but was not sure the sweet half and the bitter half "make the perfect pair." Set against those are WhiskyCast's 93, Whisky Advocate's 89 and Distiller's expert 92, all of which found the depth worth the money. The crowd sits in the middle: Distiller's 71 users average 3.96, with a clear minority calling it over-oaked or overpriced. It is a divisive bottle at the top end of the price scale, not a consensus classic.

Age, Barrels and Batches

Hillrock does not put an age statement on the label, but recent bottles carry a handwritten sticker naming the field, the harvest year and the age of that barrel — Wiltsie Bridge 2016 or 2017 Harvest, around five and a half years, is what you will most often find. That is respectable for a craft rye but modest for the price, and it means what is effectively a single-barrel product is being sold under one name; two bottles can differ more than you would expect. Older reviews from 2014 and 2015 describe a younger, batch-numbered bottling with the same recipe and proof, so the liquid has matured with the distillery rather than been reformulated. Nearby Hudson Do the Rye Thing is the other Hudson Valley rye we cover and makes a useful lower-priced contrast.

Our Verdict

A rich, oily, sweet-and-char rye that behaves more like a double-oaked bourbon than a spice-driven rye, with a long cinnamon-and-chocolate finish and almost no burn at 90 proof.
