🍸 Coltin’s Approach Behind the Stick

Seven years in and now running the bar at Legacy Club at The Circa in Las Vegas, Coltin works from two non-negotiables: quality ingredients and balance. “Get rid of cheap spirits and mixers, source consistent fresh juices and produce, and don’t be afraid of the prep,” he says. The creative work, in his telling, doesn’t happen in front of the guest — it happens in the back of house, hours before anyone sits down.

The other half of the job is reading the person across the bar. “Bartending is all about matching their energy and palate,” he says — which is why his technique list runs past the basics into smoked, fat-washed and clarified work: more ways to land on exactly what someone wants. Stirred and spirit-forward is where he’s most at home, with a Whiskey Sour or a Sazerac as the classics he reaches for first.

🍻 How Coltin Found Rye

Coltin started where most American whiskey drinkers start — bourbon, neat, after a long shift. His bar team moved him past it. “They taught me a lot about different spirits and got me into rye,” he says, and the higher-proof end of the category is where he stayed: Michter’s, Russell’s Reserve and Rittenhouse are what he pours himself when the shift is finally over.

His favorite bottle is a seasonal one: High West A Midwinter Night’s Dram, a blend of straight ryes finished in port barrels. “Soft and spicy with a great flavor profile,” he says. “Straight up heavenly.” Behind the bar the split is practical — Sazerac for stirred drinks, Russell’s Reserve or Rittenhouse when something gets shaken.

  • 2 oz Rittenhouse B.I.B.
  • 1/2 oz Apricot Liqueur
  • 1/2 oz Cynar 70
  • 1/4 oz Pedro Ximénez Sherry
  • 1/4 oz Maraschino Liqueur
  • 3 dashes Chocolate Bitters

“Add ingredients to mixing glass, add ice, stir, strain into coupe, garnish with a maraschino cherry, express and discard lemon peel.”

Q. What makes a good cocktail?

Every ingredient in the glass serving a purpose, quality spirits, proper preparation and making the guest feel special.

Q. Why do you do what you do?

I don’t make drinks, I make memories. People will hold on to a great bar experience for years to come, and it’s easy to make someone’s whole vacation with just an hour of sitting at your bar.

Q. Why is attitude and energy so important behind the bar?

When a guest comes up to your bar, they don’t wanna feel like a burden. They want to feel welcome, taken care of, and that they’re in a fun environment. The cocktail is just the garnish to their whole experience.

Q. Where do we find you when you’re not behind the bar?

Out in the desert in the middle of the night with my camera tracking the stars, or in bed watching a movie with my dog.
