Tokaji finishing involves secondary maturation in barrels from Hungary's Tokaj wine region — one of the world's oldest classified wine regions. Tokaji wines, particularly the famed Tokaji Aszú, are made from grapes affected by botrytis cinerea (noble rot), which concentrates sugars and creates unique honeyed, apricot, and marmalade-like flavors. These residual compounds remain in the barrel and transfer into the whiskey. Tokaji casks are relatively rare in whiskey-making, making this one of the more distinctive and uncommon finishing styles available.
