What wine finishing means
Wine finishing refers to secondary maturation in barrels that previously held still (non-fortified) wines. This includes red wine varietals like cabernet sauvignon, pinot noir, merlot, malbec, and zinfandel, as well as white wines like chardonnay or sauternes. Each wine type leaves different compounds in the wood — tannins, fruit acids, anthocyanins (color pigments), and residual sugars — that influence the whiskey's final character. Wine finishing differs from fortified wine finishing (port, sherry, Madeira) in that still wines typically have lower alcohol and sugar content, producing more delicate, fruit-forward results.

Any rye whiskey that has been finished or secondary-matured in still wine casks is automatically included in this collection. This covers all non-fortified wine barrel finishes — red, white, rosé, or dessert wines (excluding fortified wines like port, sherry, and Madeira, which have their own collections). Inclusion is based on the producer's stated finishing process. There is no selection based on score, ranking, or editorial preference.

Common wine cask types and their influence
Different wine varietals produce distinctive results. Cabernet sauvignon casks add dark fruit, firm tannins, and a slightly drying finish. Pinot noir casks contribute lighter red fruit — cherry, raspberry — with softer tannins. Merlot barrels offer plum and red berry with a rounder mouthfeel.
