What American rye whiskey means

Under U.S. federal regulations (TTB standards of identity), rye whiskey must be made from a grain mixture containing at least 51% rye, distilled to no more than 160 proof, entered into new charred oak barrels at no more than 125 proof, and bottled at a minimum of 80 proof. "Straight rye whiskey" must additionally be aged for a minimum of two years, and if aged less than four years, must carry an age statement. These standards ensure that any bottle labeled "rye whiskey" meets specific production requirements, though distillers have wide latitude in their mashbill (beyond the 51% minimum), yeast strains, distillation techniques, and aging decisions.
