Roundstone Rye is 100% unmalted Virginia rye, pot-distilled on the grain over about nine hours, aged in small new charred oak and bottled without chill filtration. The flagship goes out at 80 proof. The Cask Proof release goes out near 116. The Distiller's Edition sits at 92, and it is not simply the flagship with less water in it: roughly one barrel in ten is pulled for it, and the distillery is explicit that those are the barrels showing a spicier profile than the standard Roundstone.
The Pepper Is the Signature
That selection policy shows up in the glass more clearly than almost anything else we found.
