They take fully mature Elijah Craig Straight Rye and give it a second maturation in a custom-toasted new oak barrel from Independent Stave — a long, hot toast that embeds extra vanilla, caramel and a whisper of smoke into the wood. Because the finishing barrel is new and charred, it legally keeps its "Kentucky Straight Rye" designation.
