Finishing is a secondary aging process. After the rye has completed its primary aging in new charred oak, the distillery moves it to a second cask — typically one that held another spirit like rum, sherry, port, or tequila — for weeks or months. That second cask imparts flavor compounds the original barrel couldn’t.
Is a finished rye still considered a “straight” rye?
No. Federal rules require straight rye to age only in new charred oak. Adding a second cask finish disqualifies it from the “straight” category, even though the underlying spirit started as a straight rye.
What finishes pair best with rye?
