What sub-100 proof means
Proof is a measure of alcohol content — in the United States, proof equals twice the ABV percentage. A whiskey at 90 proof is 45% alcohol by volume. Federal law requires all whiskey to be bottled at a minimum of 80 proof (40% ABV). Sub-100 proof rye whiskeys fall in the range between that legal floor and the 100-proof mark that defines bottled-in-bond.
Most sub-100 proof rye whiskeys are proofed down during bottling — water is added to the aged spirit to bring it to a target ABV. This dilution reduces the intensity of the alcohol burn and can soften the whiskey's flavor profile, making certain notes more accessible while potentially muting others. U.S. federal regulations (27 CFR 5.143) require that whiskey be bottled at no less than 80 proof (40% ABV). This minimum ensures the spirit retains enough alcohol to preserve its character and stability. Below 80 proof, the product would no longer legally qualify as whiskey.
Is sub-100 proof rye better for cocktails?
It depends on the cocktail and your preference. Sub-100 proof ryes blend more seamlessly into lighter cocktails like a whiskey sour. For spirit-forward drinks like a Manhattan where you want the rye to assert itself, a 100-proof or higher expression may be a better fit.
